Plaster board and skimming to dining room ceiling in Southcoates West

Job description:A piece of the dining room ceiling as fallen down, therefore, I require the full ceiling re-doing in that room (size is 2 metres 90 x 5 metres = 15sqm). The house was built in 1900 so does not have plaster board but wooden slats instead. I would like plaster board fitted then skimming. Not sure if the boards can be fixed to the slats or if they'll need taking down (which I can do). Needing advice and quotes please. Thanks.
