How to measure carpet

What is the best way to measure carpet? I have a stairway in an entrance hall that has one 90 degree turn at the top and a separate landing space that needs carpeted.
I also heard that for the stair I need a thinner underlay, is that the case?
The plan is to measure and source my own materials and then post a job here to get it all fitted.
