Before I begin my extension

Hello, I want to significantly extend my property. Do I first ask a specialist builder and let him sort it all out, or an architect first and then the builder? What is the best profession to employ for obtaining planning permission? Thank You!

You want the architect first to sort out drawings to submit for permission and they will also let the builder see what you want

I would ask to see drawings from an architect with a specification of work first. The architect will normally help you with applying for planning permission etc. Once you have all the permissions in place and drawings available I would then be in a position to give a detailed quotation on the work involved.
