if you think you can get away without re-plastering (new cupboard willl fit edge to edge, the important thing is, are the corners of the alcove in good condition, if the corners are damaged re-plaster, if you think the damage can be repaired without completely re-plastering do this. If the damage is extensive (areas a few inches across, with live sounding plaster round them take all the plaster off and start again. Get a good mulit trade chap to look at it. Plastering again and getting everything right before you plan the new cupboards will give you the most options going forward. but it may not be necessary, as I say the key will be the conditions of the external corners
