This sounds to me that your roof space is inadequately vented try fitting tile vents or soffit vents ,you need a steady draft in the roof space and good insulation 270 mm to comply with regs this should stop condensation you won't stop the timber from swelling and shrinking but it will create a less moist environment for it and it should calm how much it moves, hope this helps.
