Converting coal store into a pantry

My new house has an old brick-built coal store (full height) that is connected to the kitchen via the newer garage. It's currently exposed brick inside and out, single thickness, with a slate roof (exposed internally) and a light. I want to convert it into a pantry, but I'm not sure how to start! I can figure out the internal fitting, but I don't know how to go about getting the walls and roof weather-and-water proofed sufficiently to put in shelving etc. Can anyone give me some advice? Thanks!
