Hello Paula, I take it that the grasses in question are not Bamboo and that you are refering to the old flower spikes. In which case yes you can cut them down or if safe to do so burn the clump, only if it is safe to do so!! If the grass is Bamboo then you can select the oldest canes to cut out leaving the youngest to grow on and then repeat next year or so if required. Regards, Phil
