Fitting kitchen worktops

I am about to order laminate worktops and want to know if its possible to buy breakfast bar size(900mm width) and then have approx 300mm cut off the back and use this to go on top of a chest high wall dividing between kitchen and dining room. Would this be fairly simple for fitter to do and would it look ok considering only one edge would be profiled and other will have to be covered by edging strip.
