How to temporary switch off the hot water supply of the house?

The house using the boiler of "Elson maxistore" 210 litres, and want to temporary switch off the hot water supply. There are two controllers one with red valve another required the screwdriver for turning. Moreover, should I spin it clockwise or anticlockwise for close?
