Does the number of panels on a solid wood interior door influence how easy / difficult it would be to break it down? and if so, what would be the ideal number of panels for a solid wood interior door to have in order to ensure maximum security?

The amount of panels is not the problem for security but the nature and environment of where the door is to be fitted? A normal internal door in a family home it should not matter, but the materials used and the main core of the door is what creates the security, as secure doors use a steel core and timber cladding for effect, it all depends on the situation and the look you require. The simplest answer is no panels at all as this means there are less joints therefore less weak points. Jon Davis
