Hi Michelle. Without looking at this it sounds like your kitchen ceiling could be finished with Artex and actually not a textured paint. This is common in a lot of older properties. The problem with old Artex is it can contain asbestos so may need testing. Depending on how thick the finish is and your budget it would be best to overboard with plasterboard and skim with plaster.
