Immersion heater replacement

Our one bedroom flat is entirely electric - no gas boiler. Hot water which serves the bath, kitchen and bathroom sinks (shower is electric) comes from an ancient immersion heater. We now want to replace this. We don't want to install wet central heating so an electric boiler is too much. We are refitting the bathroom so it will only be a shower room, so the hot water will only serve the kitchen and bathroom sinks. What are our options? Could we straightforwardly (in the same location) replace the immersion heater tank with a tankless heater like those made by Stiebel Eltron?
